Well; from what I've seen form the beta launch video: there will be several different professions including, '' Cooking, Blacksmithing, Tailoring '' and i can only assume additional professions will be added in the near future.
As for classes, I am just going to make a rough assumption here; the three basic which most if not all MMO has to offer, Warrior, Mage, Priest /Cleric and knowing Aeria there will obviously be a way to develop into a stronger version or more supportive class farther along the lines.
