What do I do with the items I can't sell? Can we create more then one character and transfer it to the other or what? I have some items that helped me I feel I could use on a different character but this game is like impossible to figure out.

You can keep them, so if you ever change classes, you can use it. Or, what you can do is sell it to the vendor for silver, or simply throw away
